Chimichangas

onion, chopped

1/2 tsp. vegetable oil

medium tomato, chopped
1/2
t. cumin
1
clove garlic, minced
4 oz.
green chilies, chopped
1/4
t. salt

lb. ground beef
4 oz.
mild cheddar cheese, grated
10 flour
tortillas (10-inches)
Vegetable
oil for frying Pepper to taste
1.Saute
onions and garlic in oil in a medium frying pan for 2 to 3 minutes.
2.Add group
beef and cook until thoroughly browned.
3. Remove from heat and drain off excess fat; mix in the tomatoes, green
chilies, cumin, salt, and pepper.
4.Place
a small amount of grated cheese in the middle of a tortilla.
5. Top with 2 or 3 T. of meat mixture.
6. Fold sides and ends into middle like an
envelope to seal in meat mixture. Secure
with toothpick.
7.Brown on all sides in a
small amount of oil in a frying pan.
Serve with salsa and sour cream.
