Chimichangas :)

This was a new recipe that turned out GrEAt! This was the first time I've let my students cook with hot oil, and it went off without a hitch! Enjoy :)




Chimichangas

1 onion, chopped                           
1 1/2 tsp. vegetable oil                       
1 medium tomato, chopped            
1/2 t. cumin  
1 clove garlic, minced  
4 oz. green chilies, chopped
1/4 t. salt 
1 lb. ground beef                                     
4 oz. mild cheddar cheese, grated      
10 flour tortillas (10-inches)
Vegetable oil for frying                      
Pepper to taste



1.Saute onions and garlic in oil in a medium frying pan for 2 to 3 minutes. 
2.Add group beef and cook until thoroughly browned.  
3. Remove from heat and drain off excess fat; mix in the tomatoes, green chilies, cumin, salt, and pepper.   
4.Place a small amount of grated cheese in the middle of a tortilla.  
5. Top with 2 or 3 T. of meat mixture.  
6. Fold sides and ends into middle like an envelope to seal in meat mixture.  Secure with toothpick. 
7.Brown on all sides in a small amount of oil in a frying pan.   

Serve with salsa and sour cream.  Makes 10.  












 

Cannoli Fun!

This year in my 9th grade foods classes we have been trying out some foreign food recipes. It has been so much fun trying out some new recipes! One of the recipes we recently did was a cannoli recipe. The kids LOVED it, and wanted to make more! Next time we'll try out chocolate :)

Cannoli



5 tablespoons flour                 3 teaspoons water mixed with 
1 1/2 teaspoons sugar             1/2 teaspoon vinegar
1/8 teaspoon salt                     1/4 cup ricotta cheese
1 tablespoon egg                    6 tablespoon powdered sugar
1 teaspoon vanilla                  1/2 cup cream, whipped
1 1/2 teaspoon butter (firm, diced) 
 Milk chocolate shavings


1.Blend flour, sugar and salt together.  Make a “well” in the center. 
2. Mix egg and butter together and pour into the well.  Stir with a fork, working from center out to   moisten flour mixture.  
3.Add water/ vinegar mixture and shape into a ball.  
4. Roll out to /16th inch thick and cut 4” circles.   
5.Wrap around cannoli tube and fry until golden brown.   
6.Twist tube out of shell. 

Filling:


1.        In a mixer, whip until stiff peaks:

1/2 cup cream
2.        In a bowl, combine:
1/4 cup ricotta cheese
6 tablespoons powdered sugar
1 teaspoon vanilla
3.        Fold whipped cream into the cheese mixture and add:
2 tablespoons shaved chocolate


  Pipe mixture into cannoli tubes. Dip ends into extra shaved chocolate!
