Pumpkin Chocolate Chip Muffins! HOorAy!



Do you like pumpkin? Do you like happiness? Do you like chocolate? Then THIS IS THE RECIPE FOR YOU! Don't wait, just do it :)



Pumpkin Chocolate Chip Muffins

1 C flour; sifted
1/2 C sugar
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1/4 C butter
1 egg beaten
1/2 C canned pumpkin
1/2 C evaporated milk

1. Preheat oven to 400 degrees
2. Sift flour, mix with sugar, baking powder, cinnamon, nutmeg and salt in medium bowl.
3. Cut in butter until mixture resembles cornmeal
4. Combine egg with pumpkin and evaporated milk
5. Add egg mixture to dry ingredients and stir JUST UNTIL MOIST! Batter will be lumpy
6. Add chocolate chips
7. Fill muffin cups 2/3 full
8. Bake at 400 degrees for 18-20 minutes

Honey Whole Wheat Bread

The past few weeks my 9th graders have been studying carbohydrates, and different types of breads. We talked about quick and yeast breads, and the differences that they have. This year we tried out a new recipe of honey whole wheat bread. It was DELICIOUS! Topped with honey butter, this bread was irresistible to all of my 9th graders.

Our recipe makes two mini loaves, but if you triple it, it will make 2 large loaves. Happy baking!



Honey Whole Wheat Bread

1. In a small bowl, combine and set aside:

  • 1 1/2 teaspoons dry yeast
  • 1/2 cup warm water
  • 1 teaspoon sugar
2. In a saucepan, heat until WARM (shortening does not need to melt):

  • 1/2 cup milk
  • 2 tablespoons honey

  • 1 1/2 tablespoons shortening

3. In the KitchenAid, using the wire whisk attachment, combine:

  • 1/2 cup white flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon salt

4. Pour heated milk mixture into dry ingredients and mix

5. Add yeast to mixture and blend

6. Change to the dough hook attachment

7. Add and mix:

  • 1 cup whole wheat flour
  • 1/2 cup white flour

8. Start adding additional white flour until dough pulls away from the side of the bowl onto the dough hook

9. Turn Kitchen Aid on and allow dough hook to knead the dough for 5 minutes.

10. Shape dough into 2 small loaves or 1 large loaf.

11. Place in a greased pan

12. Bake at 400 degrees for 25-30 minutes, or until cooked all the way through
