Fruit Pizza Creations
They literally BEG to make this every semester. My 8th graders cry because they don't get to do it. I made two of these lovely pizzas for my mom on Mother's Day and she loved it! They are fun and easy to make, so try it out at home, and get creative! Click HERE for the RECIPE!
Kitchen Crew!
I have taught these ladies for the past two years, and for some reason they just keep coming back to visit! Recently they have taken up to calling themselves my "kitchen crew", and I love it! These are some of the greatest girls you will ever meet. I'll miss them so much! They say they will come visit me next year for lunch...hmmmm...we'll see :) Thanks for some great times girls!

That's right people... The 8th grade classes have been discussing the functions of eggs in relation to protein. We decided that German Pancakes would be a fabulous way to test out our knowledge of eggs. It was definitely a success! The pictures should spell out how wonderful it was for you. This recipe was a favorite for sure! Try it with fruit, syrup, whipped cream, peanut butter, jam, or whatever works for you! Enjoy!

Cream Cheese Crepes with Orange Sauce!!!!
Honestly, can you think of anything that sounds better than this? My 9th graders had a great time making crepes with this amazing orange sauce, and licked their plates afterwards. For some reason every time my students make something in class, I go home and make it. You better believe we had crepe night at my house! Enjoy this WONDERFUL recipe below!
CREPES
Orange Sauce for Crepes
1 cup white sugar
1/2 cup butter
1/2 cup light corn syrup
1/2 cup frozen orange juice concentrate, thawed
- Combine sugar, butter, corn syrup and orange juice concentrate in a medium saucepan over medium heat.
- Bring to a boil, reduce heat and simmer 5 minutes more.
- Serve.
Filling:
1 cup whipping cream
4 oz cream cheese, softened
1/2 large package cook and serve vanilla pudding
1/2 cup sugar
1 tsp vanilla
- Beat cream cheese until smooth.
- Prepare pudding as directed and refrigerate until cooled.
- Whip cream in separate bowl. Add sugar and vanilla to whipping cream.
- Mix pudding into cream cheese mixture and then fold in whipped cream. (If you don't beat the cream cheese first you will end up with lumps. Add more sugar if you desire a sweeter dessert.)
- Spoon onto crepes and roll up. Serve with a fruit sauce on top.

Mmmmm Mmmmm Apple Crisp :)
Is it good? Yes, yes it is. Should you make it at home and put whipped cream on it? Yes, yes you should. Have fun!
Apple Crisp
Apple Crisp
3 medium tart apples, pared, peeled and thinly sliced
1/2 cup brown sugar
1/3 cup flour
1/3 cup oats
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup butter or margarine, softened
- Preheat oven to 375 °F.
- Grease a square 8 x 8 inch pan.
- Place thin, peeled apple slices in pan. Mix remaining ingredients thoroughly. Sprinkle over apples.
- Bake 20 minutes or until apples are tender and topping is golden brown.
- Serve warm and, if desired, with light cream or ice cream. Serves 4.
Fettuccine Alfredo and Chicken Rolls
The 9th graders tried out some different recipes. The Alfredo recipe was new this semester and I have to say that I didn't love it as much as our other one. The students still enjoyed both of these recipes, mostly cause hey, they get to eat!

Track Coach?
Anyone out there who knows me knows that I don't like to run. Ever. That didn't save me when I was asked to help assistant coach the track team - long distance. Scary, right? Well, needless to say, I signed up with a good attitude knowing that I was going to earn a few extra bucks, meet some new great students, and hey, get in shape! All of the above happened :)
We have had a great season, bundling up in windy snow and rain storms and enjoying sunny days. I can honestly say that I have LOVED this experience, and am SO PROUD of my track kids! They worked hard and did a fabulous job. We had incredibly fast sprinters (#1 boy in the district on the 100m!) as well as strong endurance distance runners. I really can't complain! And what am I doing with my "few extra bucks"? Caribbean here I come!!! So worth every minute, and hey - I might even sign up again next year.... maybe :) Go DFJHSTAF!!!

Twice Baked Potates
The 8th graders were slightly nervous about the strange potatoes I was asking them to make. No matter how much I tried to convince them that they would like the potatoes, they held onto their concern - UNTIL happiness popped out of the oven!
I'm pretty sure many twice baked potatoes have been made in the homes of several unexpected/happy parents :)
TWICE BAKED POTATOES
4 baking potatoes
1/2 teaspoon salt
1/3 to 1/2 cup milk
Dash of pepper
1/4 cup margarine, butter, or sour cream
Shredded Cheddar Cheese
- Scrub potatoes and, if desired, rub with shortening for softer skins.
- Prick with fork to allow steam to escape.
- Bake at 375° for 1 hour 15 minutes.
- Remove potatoes and increase oven temperature to 400°.
- Cut potatoes in half lengthwise; scoop out inside, leaving a thin shell.
- Mash potatoes until no lumps remain. Beat in milk in small amounts (amount of milk needed to make potatoes smooth and fluffy depends on size of potatoes).
- Add margarine, butter, or sour cream, and salt and pepper; beat vigorously until potatoes are light and fluffy.
- Fill shells with potatoes. Sprinkle with shredded cheese.
- Cook uncovered until cheese melted, approx. 10-20 min
Serves 4.
