Cream Cheese Crepes with Orange Sauce!!!!



Oh yes, he was THRILLED to show me his sweet "flipping" skills!





Honestly, can you think of anything that sounds better than this? My 9th graders had a great time making crepes with this amazing orange sauce, and licked their plates afterwards. For some reason every time my students make something in class, I go home and make it. You better believe we had crepe night at my house! Enjoy this WONDERFUL recipe below!

CREPES


Orange Sauce for Crepes

1 cup white sugar
1/2 cup butter
1/2 cup light corn syrup
1/2 cup frozen orange juice concentrate, thawed

  1. Combine sugar, butter, corn syrup and orange juice concentrate in a medium saucepan over medium heat.
  2. Bring to a boil, reduce heat and simmer 5 minutes more.
  3. Serve.
 

Filling:
1 cup whipping cream
4 oz cream cheese, softened
1/2 large package cook and serve vanilla pudding
1/2 cup sugar
1 tsp vanilla

  1. Beat cream cheese until smooth.
  2. Prepare pudding as directed and refrigerate until cooled.
  3. Whip cream in separate bowl. Add sugar and vanilla to whipping cream.
  4. Mix pudding into cream cheese mixture and then fold in whipped cream. (If you don't beat the cream cheese first you will end up with lumps. Add more sugar if you desire a sweeter dessert.)
  5. Spoon onto crepes and roll up. Serve with a fruit sauce on top.
